Quick and Easy Fortune Noodle Soup is an Asian inspired dish that is simple to prepare and is the perfect solution for warm weeknight dinner.
I don’t know about you, but I have eaten a lot of ramen noodles over the span of my life; especially during my single years. It’s warm, salty, and simple to make and eat. However, those packages you buy from your local supermarket aren’t usually associated with fine dining. So when we were approached by Fortune Udon Noodles, I was skeptical of the partnership. Fortunately for us, we visited their website and learned a lot about the product.
Fortune Noodles are made with 100% natural ingredients, they contain no MSG, no cholesterol, and are fortified with Omega-3 vitamins. Surprising to me, they have to be refrigerated, which means they are made with fresh ingredients. Unlike those other brands that can sit on a shelf for months before going bad. They come in 5 different flavor options including beef, chicken, and mushroom just to name a few. All you need to do is add the proteins and vegetables. They can be stir-fried as well, should you desire. After reading the website, I was excited to give them a try.
We chose chicken and mushroom for our flavors and used the mushroom flavor for this recipe. The directions were simple, and within minutes, I had a warm and filling soup. I added broccoli, carrots, and chives, not only for color but taste as well. The noodles were soft, but they didn’t feel overcooked or squishy. They flavor was delicate and satisfying. Making this dish takes little to no time out of your day. That’s why it’s such a great option to have in the fridge for those busy nights. First, shred the broccoli and carrots. You can use a cheese grater or slice them thinly by hand. Next, combine the vegetables and water in a medium saucepan and bring the mixture to a boil on medium heat. Last, add the noodles and seasoning package and let soup continue to boil for 3 to 5 minutes or until noodles are done. Remove from heat and transfer the soup to a bowl. Garnish it with chives and enjoy.
Used in this Recipe:
- 1 7.27 Ounce Package of Fortune Udon Noodles (206 grams)
- 1 1/3 Cups of Water
- 1 Ounce of Shredded Carrots (28 grams)
- 1 Ounce of Shredded Broccoli (28 grams)
- Garnish with Chives
In a medium saucepan, on medium heat, bring combine water and vegetables and bring to boil.
Remove noodles and seasoning pack from packages and add to boiling water.
Stir soup for 3 to 5 minutes or until Udon noodles are fully cooked.
Garnish with Chives.
Serve and enjoy.
Can be stored in refrigerator for up to 2 days in sealed container.
