Chocolate Walnut Fudge

A simple 5-ingredient chocolate walnut fudge that you can create in your microwave. It’s a no-fuss, no-fail fudge recipe anyone can make!

Now that Thanksgiving is done, it’s time to focus on my favorite holiday, Christmas! That means warm, comforting dinners and sweet treats. For today, we’re sharing Kim’s chocolate walnut fudge.

It’s such a simple recipe. Using your microwave, the fudge is ready to chill in about 4 minutes. I’ll provide some tips below to simplify the process even more. So, shall we get started?

How to make chocolate walnut fudge in the microwave:

First, grab an 8×8-inch square baking dish. Line the dish with parchment paper or aluminum foil.

Afterward, use non-stick cooking spray to grease the liner. Doing so will keep the fudge from sticking as it cools.

Next, combine the butter, sweetened condensed milk, and chocolate chips in a large, microwave-safe mixing bowl.

After that, place the bowl into your microwave. Use the high-power (see tips below) setting and heat the ingredients for 3 to 4 minutes.

Be sure to stir the ingredients every 30-seconds in order to have a smooth, creamy fudge. Once the ingredients are properly incorporated, stir in the chopped walnuts.

Then pour the cooling chocolate into the prepare baking dish. Now, you can use a butter knife or rubber spatula to smooth out the fudge.

Also, give the pan a few subtle shakes (jiggle back and forth) on the counter-top. I use that method on cake batters too.

Last, place the fudge into the fridge (uncovered) to chill for about 3 hours. Once it’s set, cut it and serve.

Chocolate Walnut Fudge Tips & FAQ’s:

  • We have a small 700-watt microwave, so we used the high-power setting. If you have an 1100-watt microwave, then I recommend using the medium power setting when heating the chocolate, condensed milk, and butter.
  • The larger the baking dish, the thinner your fudge will be. For example, if you use a 9×9-inch baking dish, then your chocolate fudge will not be as thick as ours.

Why is my chocolate fudge grainy?

Because you did not stir it enough during the melting process. Stirring fudge while melts and begins to cool will help create a smooth and creamy fudge. Also, using a good quality chocolate doesn’t hurt.

How do I cut perfect squares of fudge?

There are 2 ways to accomplish this task. One way is to run a sharp knife under hot water between each cut. The warm knife will make a cleaner cut.

Another option is to use a wire cheese slicer. I know sounds silly, but I use it to cut fudge (without nuts) and it works.

Ingredients

  • ½ cup unsalted butter
  • 11 ½ ounces milk chocolate chips, 1 bag or about 2 cups
  • 12 ounces semi-sweet chocolate chips, 1 bag or about 2 cups
  • 28 ounces sweetened condensed milk, 2-14 ounce cans
  • 1 ½ cups walnuts, chopped

Instructions
 

  • Line an 8 x 8 – inch with foil or parchment paper, and lightly grease with cooking spray. Set aside.
  • Place the butter, chocolate chips, and sweetened condensed milk in a large, microwave-safe bowl. Heat it for 3 to 4 minutes (high power-see tips), stirring at 30 second intervals, until melted and smooth.
    ½ cup unsalted butter
    11 ½ ounces milk chocolate chips
    12 ounces semi-sweet chocolate chips
    28 ounces sweetened condensed milk
  • Add the walnuts, and stir until incorporated.
    1 ½ cups walnuts
  • Transfer the fudge into the prepared pan, and smooth into an even layer. Refrigerate for 2 to 3 hours until set. Cut into squares and serve.
  • Store leftovers in the refrigerator or at room temperature for up to 4 days.

I told him before I ended up searching for a recipe that I use to get mine while on vacation in the mountains and it was always the best. Franchised fudge factories had nothing on the place in the mountains and now also this recipe!! I make it for my husband and also for my dad who loves fudge!
