Our Pancake Sliders are a sweet and savory breakfast made with ham, eggs, and cheese sandwiched between two fluffy pancakes. This recipe is kid-friendly and perfect for breakfast, brunch, or as a fun snack!

Family-friendly meals are some of our favorites and these ham, egg, and cheese pancake sliders don’t disappoint. They’re a great meal to make in an assembly line style while letting the kids help.

We also love how easy it is to customize these handheld breakfast sandwiches. Everyone gets to choose their breakfast favorites for the perfect bite!

Serve these up with a side of home fries, homemade fruit salad, or a strawberry banana smoothie for the ultimate weekend breakfast!

How to Make Ham, Egg, and Cheese Pancake Sliders:

We use frozen pancakes to make this recipe super simple! It not only cuts down on prep time, but it saves on dishes, too. Win, win!

  1. Heat the pancakes according to the package directions and arrange them on a wire rack.
  2. Place the cooked ham slices into a skillet and heat over low-medium heat until warmed through. While the ham warms up, cook the eggs.
  3. Crack the eggs into a bowl, add salt and pepper, and whisk until foamy.
  4. Heat a pan over low-medium heat. Spray with cooking spray, and pour some of the egg mixture into the warm pan. You’ll want enough to equal about the same amount as 1 egg. Once the egg finishes cooking, fold it over to form a half circle then fold it in half again to make a triangle.

  1. Place the warm ham slices onto the pancakes followed by the folded eggs. Add a slice of cheese on top of the eggs then add the top pancake.
  2. If desired, heat the pancake sliders in the microwave for 10 to 15 seconds to melt the cheese. Enjoy!

How to Store Breakfast Sliders:

We recommend enjoying these sliders as soon as they’re made. Storing and reheating previously frozen pancakes may cause them to harden making the breakfast sandwiches inedible.

If you make the pancakes from the scratch, the sliders stay fresh in the fridge for about 2 to 3 days.

Can you freeze pancake sliders?

It depends. If you’ve made these sandwiches using homemade pancakes, then yes. They’ll store well in the freezer for about 2 months. Wrap them separately and you’ll have individual servings whenever you like!

If you’ve used pre-packaged frozen pancakes, then it depends on the brand. Some brands advise not to refreeze and reheat. Check the package to be sure.

Can you use homemade pancakes?

Yes, absolutely! When we have time, we make this recipe using our homemade buttermilk pancake recipe. If you have a favorite pancake recipe, use it instead.

The pancakes need to be thin and able to hold up to being used like a bun or piece of bread, similar to a sandwich.

Do fried eggs work in this recipe?

For sure! Cook the eggs however you like. We like scrambled eggs folded up into a triangle shape. If you like fried eggs, those totally work!

Over easy, over medium, or over hard eggs all taste great on these breakfast sliders.

Will waffles work in place of the pancakes?

If the waffles are large enough, yes they work great! Waffles make a great substitute for pancakes if that’s what you prefer. Just make sure they’re the correct size.

What are some variations of these breakfast sandwiches?

There are several things you can add to these sliders so everyone has a sandwich that they love! Here are a few of our favorites:

  • Canadian Bacon.
  • Your favorite cheese slices.
  • Chives.
  • Maple Syrup.
  • Hash Brown Patties.

Ingredients

  • 8 frozen pancakes, about 3 to 4 inches in diameter; 2 for each slider
  • 4 ounces ham, 1 ounce slices (We use Frick's Smoked Ham, pre-sliced)
  • 4 large eggs
  • Salt and pepper, to taste
  • 4 slices American cheese

Instructions
 

  • Heat the pancakes according to the package directions and arrange them on a wire rack or individual plates.

  • Heat a pan over low-medium heat and spray with cooking spray. Pour some of the egg mixture, equal to one egg, into the warm pan. Once the egg finishes cooking, fold it in half to form a half circle then fold it in half again to form a triangle. Remove from the pan.
  • Place the warm ham slices onto the pancakes followed by the folded eggs. Add a slice of cheese on top of the eggs then add the top pancake.
