Roasted Broccoli with Walnuts is a quick and healthy side dish that everyone will love. It’s nutty, crunchy, spicy and takes less than 20 minutes to make!
I’m one of the fortunate parents who have a kid that loves broccoli, and that makes me a happy mom! Kale likes it boiled, steamed, roasted, and even raw. Roasted broccoli with walnuts is a side dish we often make because it’s something the whole family can eat and it’s healthy.
Plus, this recipe is an excellent way to get in some of your daily nutrients if you are trying to eat healthier. The broccoli is a wonderful source of vitamin K, C, B1, B6, and don’t forget the fiber! Walnuts are a good, too. They are full of vitamin E, folate, omega-3 fatty acids, and antioxidants. Wash and Dry the Broccoli:
Cut the broccoli florets from the stalks and wash thoroughly. Rinse well to remove any loose dirt then pat dry. Getting all the water out of the florets is important. Otherwise, the broccoli will steam instead of roast. I like to use a salad spinner to dry the broccoli.
Mix the Ingredients:
Add the broccoli, olive oil, walnuts, red pepper flakes, and salt to a medium bowl and toss to combine.
Pour the broccoli mixture on a baking sheet and place in an oven preheated to 425 degrees. Bake for 10 minutes or until broccoli becomes lightly brown on the tops. Don’t let it overcook or the walnuts will burn. Remove from the oven and serve immediately.
- 2 cups broccoli florets
- 1/4 cup chopped walnuts
- 2 Tablespoons olive oil
- 1/4 teaspoon red pepper flakes
- Salt to taste
Preheat oven to 425 degrees.
