Baked Sweet Potatoes

Scrub the potatoes well under cold water, pat them dry with a paper towel.

Place the potatoes on a baking sheet, and pierce the potatoes all over with a fork.

Lightly coat the potatoes with olive oil.

Bake at 400°F for 60 to 75 minutes.

The potatoes will darken in color and some of the sugars may run out. Let the potatoes cool for 10 minutes.

In a medium-sized bowl beat butter with the brown sugar, cinnamon, vanilla, and salt for 2 minutes until light and fluffy.
