Banana Bread
Cream together butter and sugar until light and fluffy.
Add the eggs and vanilla, and continue to mix until well combined.
Add three overripe bananas to the butter, sugar, eggs mixture.
Mix the bananas until no large chunks remain.
Add the baking soda, salt, cinnamon, nutmeg, and flour. Mix until no dry patches remain (don't over mix!).
Pour in the walnuts (if using).
Use a spatula to fold the walnuts into the batter.
Transfer the batter to a greased 9 x 5 - inch loaf pan.
Bake on 375ºF for 15 minutes then reduce the temperature to 350ºF. Bake for an additional 40 minutes.
