Beer Cheese Soup

Cook bacon in a large pan until crispy. Remove the bacon, and reserve 2-3 tablespoons of rendered bacon fat.

Add the onion and jalapeno. Cook for 3 to 5 minutes or until they begin to soften.

Add the garlic, thyme, and paprika. Continue to cook for another 30 seconds. Stir in the butter until melted. Then add the flour, and cook for 3-4 minutes.

Pour in your choice of beer, and stir to combine. Adjust heat to bring the soup to a simmer. Cook until the beer thickens slightly.

Pour in the chicken broth and heavy cream. Stir to combine. When the liquid begins to steep, stir in small bits of cheese and whisk well.

Stir in half the bacon, and serve hot! Garnish with more bacon, green onions, croutons, and jalapeños.
