Blueberry Pancakes

These Blueberry Pancakes are a blueberry lover’s breakfast dreams come true.

Ingredients

Pancakes: – all-purpose flour – buttermilk – milk – unsalted butter  – granulated sugar – egg – baking powder – pure vanilla          extract – baking soda – kosher salt – blueberries

Ingredients

Compote: – blueberries  – granulated sugar – water – cornstarch

Step 1

Mix together pancake ingredients until combined. Gently fold in the blueberries.

Step 2

Cook batter until the edges crisp & bubbles form. 

Step 3

Flip & cook until golden-brown.

Step 4

In a saucepan, mix blueberries, sugar, cornstarch & water.

Step 5

Cook over low-med heat until thickened, stirring often. Serve over pancakes.
