Activate yeast in warm water, milk, and sugar. Meanwhile, mix flours, sugar, salt, and butter in the stand mixer using the paddle attachment until it resembles coarse cornmeal.
Add eggs and yeast mixture to the flour mixture, then mix with a dough hook for 6 to 8 minutes until smooth. Cover, and allow to double in size.
Deflate the risen dough, divide it into 8 equal pieces, and roll it into balls. Place the balls into a prepared baking dish to rise a second time.
Apply an egg wash, and bake at 400ºF for 12 to 15 minutes with a pan of water to create steam in the oven.
