Cheesy French Onion Potato Bake

Parboil the potatoes & remove skins. Meanwhile, combine melted butter and flour in a skillet. Then add heavy cream, milk, & onion soup mix. Add cheese, and whisk until melted. Remove from heat. 

Slice the potatoes to 1/4-inch thick. Place a third of the potatoes into the baking dish, followed by a third of the onions.

Top the potatoes and onions with a third of the cheese sauce.

Repeat the layers 2 more times with the remaining potatoes, onions, and cheese sauce, then top with the remaining shredded cheese.

Bake uncovered on 350°F for 25 to 30 minutes or until the potatoes are cooked through.

Serve hot, and store leftovers in the refrigerator for 3 days.
