Chicken and Potato Soup
Heat oil over medium heat, then add carrots, celery, and onion. Cook until soft.
Add the garlic, bay leaves, thyme, salt, pepper, broth, and chicken breast. Simmer for 40 to 50 minutes.
Add the potatoes, and continue to cook for an additional 20 minutes.
Shred the chicken, and discard the bay leaves and thyme. Serve hot!
