Fajita Quesadillas
Get the Recipe
Add oil, peppers and onion to a pan. Cook until they begin to soften.

Add ½ of the fajita seasoning packet and cook for 2-3 more minutes.

Remove the vegetables from the pan, and add oil, chicken and remaining fajita seasoning.

Cook for 8-10 minutes or until the chicken is cooked through.

Add the peppers back to the pan and stir to combine.

Butter one side of a tortilla and place it in a warm pan. Add shredded cheese to one half of the tortilla.

Place the chicken pepper mixture on top of the cheese.

Sprinkle more cheese on top of the chicken and peppers.

Fold the tortilla over to form a half moon shape.

Flip the quesadilla to cook the other side.

Serve with guacamole or salsa.
