Instant Pot King Ranch Chicken Pasta
Sauté the chicken in oil in the hot Instant Pot for 3-4 minutes. Remove to a waiting plate.
Add the onion, cook for about 3 to 4 minutes until the onion begins to soften. Deglaze the pot if necessary. Turn of the Instant Pot.
Add the pasta noodles, broth, chicken, taco seasoning, cream of chicken soup, tomatoes and green chiles, and extra green chiles if using. DO NOT STIR!
Add the lid, set the valve to "sealing," and cook for 6 minutes on high pressure. After the time is up, complete a quick release, then open the lid.
Add the shredded cheese, and give the pasta a good stir.
Serve hot topped with crushed tortilla chips, sour cream, salsa, or your other favorite toppings.
