Instant Pot Lava Cakes
Butter 4 ramekins and dust them with cocoa powder. Set aside.
Place butter and chocolate in a microwave-safe bowl.
Melt the butter and chocolate in the microwave, stirring every 20 seconds until smooth.
Place eggs, egg yolk, sugar, and salt in a medium bowl.
Use an electric mixer to beat the egg mixture until light in color.
Add the melted chocolate, flour, and espresso powder to the egg mixture.
The batter will thicken as it's stirred and become the consistency of brownie batter.
Divide the batter evenly among the 4 prepared ramekins.
Place a trivet, 1 cup of water, and the 4 batter filled ramekins in the Instant Pot.
Cook on high pressure for 7 minutes. Complete a quick release when the time is up. Remove the cakes, and invert on plates.
Serve with fresh berries, powdered sugar, or vanilla ice. Enjoy immediately.
