Ranch Chicken and Rice
Add oil and chicken to the hot Instant Pot, and cook the chicken on both sides for about 3-5 minutes then remove. Add the diced onions, cook, then deglaze the pan.
Add the chicken back to the liner along with the rice, broth, and ranch seasoning.
Cook on high pressure for 8 minutes with a 10 minute natural pressure release.
Use two forks to shred the chicken.
Pour in the heavy cream and cheese. Stir until the cheese is melted. Serve hot, and top with more cheese.
