King Ranch Casserole
Place sautéed onions, garlic, chopped chicken, sour cream, salsa verde, tomatoes, green chiles, and cumin in a large bowl.
Stir until the ingredients are well combined.
Spread one fourth of the chicken filling into the bottom of a prepared baking dish.
Top with 1 cup of shredded cheese, then place a layer of tortillas over the cheese.
Repeat this process 2 more times making sure to use all the tortillas. Spread the last of the chicken filling on the top, then top that with the last cup of cheese. Bake on 400°F for 20-25 minutes.
Serve warm, and store leftovers in the refrigerator for up to 3 days.
