Loaded Chicken Breast
Season both sides of 1 pound of chicken breasts with salt and pepper.
Cook the chicken for 7 to 8 minutes on each side until the thickest part reaches 165°F.
Melt butter in a medium skillet, and add the mushrooms. Cook for 6 to 8 minutes or until the mushrooms soften.
Cook 8 strips of bacon until crisp, and set aside.
Lay the cooked chicken breasts in a 9 x 13-inch dish.
Top the chicken with mushrooms, bacon, and shredded cheese.
Bake on 250° for 5 to 10 minutes, just long enough for the cheese to melt.
Serve immediately with a side of honey mustard dressing and French fries.
