Cream together butter & sugars until light and fluffy. Beat in the egg & vanilla extract.
In a separate bowl, whisk together flour, cornstarch, baking soda & salt.
Add the dry ingredients to the wet ingredients & mix until just combined.
Carefully fold in the mini egg pieces.
Form dough into balls & refrigerate for 30 minutes.
Bake until they are slightly brown on top.
