Place pie crust in a 9-inch pie dish, and poke holes in the bottom.
Bake on 375°F for 10 minutes.
Cook the sausage until no pink remains, then add the onion.
Cook until soft. Drain excess grease, and set aside.
Whisk together the eggs, milk, sour cream, salt, and pepper.
Stir in the cooled sausage and onions.
Add the shredded cheese.
Pour the filling into the pie crust, and bake on 375°F for 25 to 30 minutes.
Serve warm with your favorite breakfast or brunch sides.
