In a medium saucepan, melt the butter, then add the flour and whisk until combined. Continue to cook for 2 to 3 minutes.
Pour in the milk, heavy cream, and Cajun seasoning while continuing to whisk until the mixture begins to steam and thicken slightly.
Add small handfuls of cheese and whisk between each handful ensuring all the cheese is melted. Continue until all the cheese is used.
Pour the sauce over the cooked noodles and toss to combine.
Serve hot with a side salad! Store leftovers in the refrigerator for up t 3 days.
