Vegetarian Egg Rolls
You'll need: Oil, wrappers, coleslaw mix, carrots, soy sauce, mushrooms, garlic, green onions, ginger, salt, and water.
Heat 1 tablespoon of vegetable oil, then sauté the mushrooms until soft. Add slaw mix, carrots, green onions, soy sauce, garlic, ginger, and salt. Cook until softened.
Place 2-3 tablespoons of filling in a wrapper. Seal shut with water. Pan fry in hot cooking oil until brown and crispy, then remove from oil.
Serve immediately with dipping sauce.
