Vegetarian Tamales

These Vegetarian Tamales made with roasted poblanos, masa & cheddar cheese are flavorful and versatile!

Ingredients

– dried corn husks – poblano peppers – vegetable broth – canola oil – chili powder – cumin – kosher salt – masa harina – baking powder – sharp cheddar          cheese

Step 1

Submerge corn husks in hot water. Broil peppers until skins blacken.

Step 2

Once cooled, peel away the pepper skins, cut off tops & remove seeds. Cut into strips & set aside.

Step 3

Whisk together broth, oil, chili powder, cumin & salt. Heat on med-low until steaming.

Step 4

Place masa harina & baking powder in the bowl of a stand mixer.

Step 5

Slowly add vegetable broth until a soft dough forms.

Step 6

Spread the masa mixture onto a husk. Add a piece of cheese & a strip of pepper.

Step 7

Fold the tamale & tie with a strip of husk. Steam for 1 hour and 15 minutes.  Allow to cool.
