  • 2 Cups White Rice (long grain, unrinsed)
  • 2 1/4 Cups Water (or beef, chicken, or veggie broth)
  • 1 Tablespoon Olive Oil
  • 1/4 Cup Cilantro (finely chopped)
  • 2 Tablespoons Lime Juice (preferably fresh squeezed)
  • 1 Tablespoon Lime Zest
  • Salt To Taste

Instructions

  • Place oil, rice, and water into the liner of the Instant Pot. Stir to ensure all the rice is covered by the water.
  • Close the lid, and set the valve to sealing. Press the “rice” button, and the time should automatically default to 12 minutes at low pressure.
  • After the time is up, turn off the Instant Pot using the “cancel” button, and allow a 10 minute natural release before opening the valve to release any remaining pressure.
  • Open the lid, and use a fork to fluff the rice. Add the lime zest, lime juice, and cilantro. Mix well to combine the ingredients.
  • Serve hot, and store any leftovers in an airtight container in the refrigerator for up to 3 days.
