  • 3 Cups Old Fashioned Oats (rolled oats)
  • 1/2 Cup Honey
  • 1/4 Cup Unsalted Butter
  • 1/4 Cup Brown Sugar
  • 1 Teaspoon Vanilla Extract
  • 1/2 Teaspoon Salt
  • 1/2 Cup Mini Chocolate Chips

  • Preheat the oven to 350 degrees F. Line an 8 x 8 inch or 9 x 9 inch baking pan with parchment paper along the bottom and sides. Spray lightly with cooking spray. Set aside.
  • Place the oats on a separate, small baking sheet in an even layer. Transfer the oats to the oven, and bake for 8-10 minutes or until they are lightly toasted. Remove the oats from the oven, and place in a large bowl.
  • In a small saucepan over low-medium heat, combine the honey, butter, brown sugar, vanilla, and salt. Cook until the sugar is completely dissolved and the butter is melted. Then pour the mixture over the toasted oats. Stir to combine. Let the mixture cool for 20-30 minutes, then stir in the mini chocolate chips. It’s possible some of the chips may melt a little, but that’s fine.
  • Transfer the mixture into the prepared pan, and use a silicone spatula to press the mixture into an even layer. Place the pan in the refrigerator for at least 2 hours to chill.
  • After the granola bars have chilled, remove them from the pan by gently pulling up the parchment paper. Use a sharp knife to cut even sized bars.
