Instructions
Preheat the air fryer to 375°F, and cut the puff pastry into 4 squares.

On one half of each piece, layer 3 to 4 pepperoni slices and about 1 mozzarella string cheese (or a small handful of shredded mozzarella). Sprinkle with Italian seasoning, and keep the filling away from the edges.

Combine the egg and water to make the egg wash.

Brush the pastry edges with egg wash, fold the empty half over the filling, and press with a fork to seal. Cut 2 to 3 small slits in the top of each pocket for steam to escape, then brush the tops with more egg wash.
Place the pockets in a single layer in the air fryer basket. Air fry at 375°F for 9 to 11 minutes, flipping once halfway through, until puffed and deep golden brown.
Let them rest for 3 to 5 minutes, then serve warm with pizza or marinara sauce for dipping.
