Instructions
Preheat the oven to 425°F and grease a baking sheet or line it with parchment paper.
In a large bowl, combine the flour and butter. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.

Stir in the cheddar, scallions, and salt until evenly distributed.

¼ cup finely chopped scallions or chives,
¼ teaspoon salt
Pour in ¾ cup of cold buttermilk and gently stir until the dough just comes together. Add a little more milk if it seems too dry.
¾ to 1 cup cold buttermilk or whole milk
Turn the dough onto a lightly floured surface and pat it into a ¾-inch-thick rectangle. Then cut out biscuits with a 2 ½-inch cutter.
Place the biscuits close together on the baking sheet for softer sides or spaced apart for crispier edges.
Bake for 16–20 minutes or until golden brown. Serve warm.
