Instructions
Preheat the oven to 400°F. Line a large, rimmed baking sheet with aluminum foil. Spray lightly with nonstick cooking spray.
Arrange the brats in a single layer on the prepared baking sheet.
2 (19-ounce) packages bratwurst
Bake for 35 to 40 minutes, flipping once halfway through. The brats are done when they reach an internal temperature of 160°F.
If using the beer and onions, add them to the pan about 10 minutes before the brats finish cooking.

Notes
Do not pierce the brat casings before baking. Poking holes lets the juices escape and the brats will dry out.
For a char similar to grilling, switch the oven to broil for 2 to 3 minutes at the end of cooking. Watch them closely.
Store leftover brats in an airtight container in the fridge for up to 3 days. To freeze, cool completely and transfer to a freezer safe bag or container for up to 3 months. Thaw in the fridge overnight before reheating.
