Thaw the peas in warm water for a few minutes, then drain and pat dry.
2 cups frozen peas
Slice the radishes thin using a mandoline, food processor with a slicing blade, or a sharp knife.
½ cup thinly sliced radishes
Whisk the olive oil, lemon juice, salt, and black pepper in a small bowl.

In a large bowl, toss the peas, radishes, mint, shallot, and nuts if using.
¼ cup fresh mint leaves, ¼ cup crumbled feta cheese, 1 small shallot, ¼ cup slivered almonds
Pour the dressing over the salad and toss gently to combine.
Sprinkle feta on top if using.
Let the salad sit for 15 minutes in the fridge or serve immediately.
Notes
Servings: This pea salad makes about 4 servings, with each serving being approximately ¾ cup (about 150g).
Mint: If you don't like mint or can't find fresh mint, try another fresh herb like basil, thyme, or oregano. Also if your mint leaves are small, feel free to skip the chopping and just toss them into the salad.
Nuts: Almonds or pine nuts add extra flavor and texture to the salt. If you can't have nuts, simply leave them off or swap them out with sunflower or pumpkin seeds (pepitas).
Prep: This salad comes together fairly quickly if you prep the radishes, mint, and dressing while the peas thaw. Then it's just a matter of mixing everything together.
Storage: Store any leftovers in an airtight container in the refrigerator for up to 2 days.
