Add the ingredients to a mason jar with a tight-fitting lid and shake to combine. If you don't have a jar, use a bowl and whisk.
½ cup extra virgin olive oil, ¼ cup red wine vinegar, ¼ cup honey, 1 teaspoon poppy seeds, 1 teaspoon ground mustard, ½ teaspoon salt
Serve over your favorite salad and store leftovers in the fridge for up to 5 days.
Notes
Separation is very common and will happen when the dressing is stored in the fridge. Let it sit at room temp for a few minutes before shaking to combine the ingredients.
If you're salt sensitive, make the dressing without it. Taste the finished dressing, then add only as much as you like.
