In a medium bowl, combine the ground turkey sausage, pepper, onion, breadcrumbs, sage, salt, pepper, and poultry seasoning. Form the mixture into 8 individual, round patties and place them on waxed paper.
1 pound ground turkey, ½ cup bell pepper, ¼ cup white onion, 1 teaspoon ground sage, 1 teaspoon kosher salt, ½ teaspoon white pepper, ½ teaspoon poultry seasoning, ¼ cup breadcrumbs
Heat a nonstick skillet or cast iron skillet over low heat. When the skillet is hot, add the oil. Work in batches and carefully place a few of the patties into the hot skillet. Allow them to cook for 8 to 10 minutes then flip them over to cook on the other side for an additional 5 to 6 minutes.
1 teaspoon cooking oil
Remove from the skillet and serve hot with eggs and sliced apple.
