Preheat the oven to 350°F, and spray an 8x8-inch baking pan with nonstick spray. Set aside.
In a large bowl, whisk the flour, sugar, cocoa powder, baking powder, baking soda and salt.
2 cups all-purpose flour, 1 cup granulated sugar, ¼ cup unsweetened cocoa powder, 1 teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon kosher salt
Stir in the coffee, oil, vinegar and vanilla just until combined then pour it into the prepared baking pan.
1 ¼ cup freshly brewed coffee, ⅓ cup vegetable oil, 1 tablespoon white vinegar, 2 teaspoons pure vanilla extract
Bake for 30-35 minutes or until a toothpick comes out clean when inserted into the center of the cake.
Allow the cake to cool completely before frosting.
