Chicken Broccoli Rice Casserole
Heat oil in a pan over low to medium heat. Add the onion, chicken, salt, and pepper. Cook for 5 to 6 minutes. Then add the garlic.
Add cream of chicken soup, rice, and 2 ½ cups of chicken broth.
Bring to a boil, then reduce to a simmer, and cover. Cook for 15 minutes. Stir occasionally.
Remove from heat, uncover, and add the broccoli and half the cheese. Stir to combine.
Sprinkle the remaining cheese on the top cover for an additional 5 minutes.
Serve hot with your favorite side dish.
