Melt the butter in a large pan over low heat. Stir in the vanilla extract and salt. Then add 8 cups of mini marshmallows.
½ cup unsalted butter, 1 teaspoon pure vanilla extract, pinch kosher salt
Continue stirring until the marshmallows melt. Carefully stir in the cereal taking care not to crush the pieces.
9 cups cinnamon toast crunch cereal
Remove from heat and stir in the remaining 1 cup of marshmallows.
Gently press the cereal mixture into the prepared pan, and allow the bars to cool completely before slicing and serving.
