Flatten each portion into a thin patty, about ½ to ¾-inch thick and slightly wider than the bun.
Place 1 ounce of your chosen cheese or filling in the center of 4 patties. Top each filled patty with one of the remaining patties.

Pinch and crimp the edges to seal, then gently smooth the edges with your hands to make sure the filling is completely enclosed.
Heat a large skillet over low-medium to medium heat. Add the stuffed patties and cook for 6 to 8 minutes on each side, or until the burgers are cooked through.
When you flip the burgers, add a lid to ensure the burgers cook through and help melt the cheese.
Transfer the burgers to toasted buns, add your favorite toppings, and serve immediately.

Notes
Salt: If your burger seasoning doesn't have salt, consider adding a little to flavor the ground beef.
Cheese options: Pepper jack, cheddar, or American cheese all work well. For pepper jack, use 1 ounce of small cheese cubes per burger. For bacon cheddar, use ½ ounce shredded cheddar and ½ slice cooked, crumbled bacon per burger. For Juicy Lucy burgers, use 1 ½ slices of American cheese per burger, torn into small pieces.
Seal the patties well: Pinch and crimp the edges tightly so the cheese stays inside while the burgers cook.
Ground beef: We used 80/20 ground beef for these stuffed burgers. If using lean beef, cook the burgers over slightly lower heat and avoid pressing them with a spatula.
Cheese warning: The filling will be very hot right after cooking. Let the burgers rest for a few minutes before serving.
Storage: Store cooked stuffed burgers in an airtight container in the refrigerator for up to 3 days. Reheat over low heat or in the microwave at half power until warmed through.
