Preheat the oven to 350°F. Slice the baguette into 12 pieces, about ½ inch thick, and arrange them on a baking sheet.

Toast the bread for 3 to 5 minutes, or until lightly browned and crisp. Leave the oven on.
While the bread toasts, heat the oil in a medium skillet over medium heat. Add the sausage and cook for 5 to 7 minutes per side, or until browned and cooked through.

Remove the sausage from the pan. Add the peppers and onions and cook for 7 to 8 minutes, or until they soften and begin to brown around the edges.

Remove the casing from the sausage, then slice it into ¼-inch thick rounds.
Place 2 to 3 sausage slices on each piece of toasted bread. Top with 1 to 2 tablespoons of peppers and onions, then sprinkle with mozzarella cheese.

Return the crostini to the oven just until the cheese melts. Serve warm.
Notes
Toast those bread slices! One of my personal culinary pet peeves is soggy bread. That’s also true with this crostini. Make sure to toast it until it’s golden brown before adding the sausage and peppers.
Don’t use too much oil. The sausage will provide some fat that can be used to cook the peppers and onions. When you add the oil for the sausage, go light. Otherwise, your filling will be greasy. Turkey sausage and low-moisture mozzarella will also help reduce greasiness.
Use a sturdy bread. Choose a baguette or loaf that’s sturdy and can hold up to the weight of the topping. Something like a French baguette, artisan bread, or sourdough. I’d skip sandwich bread or plain white bread.
Storage: Store the topping and any bread slices separately in the fridge for up to 3 to 4 days. The bread will dry out the longer that it's stored.
