Make the simple syrup well ahead of time by combining equal parts granulated sugar and water on the stovetop over low heat. Whisk until the sugar dissolves completely. Let it cool to at least room temperature before using.
Muddle the mint, lime wedges, and sugar together in a cocktail shaker until the mint is bruised and the lime releases its juice.
16 fresh mint leaves, 2 teaspoons granulated sugar, 2 limes
Add the ice, rum, and simple syrup to the shaker, then shake for 10 to 15 seconds.
1 cup ice, 4 ounces white rum, 6 ounces simple syrup
Strain into a glass of ice and fresh mint, or pour the whole mixture, muddled mint, lime wedges, and all, into an ice-filled glass.
Finish with the club soda, stir, and garnish with a lime wedge and mint sprig.
4 ounces club soda
Notes
Make the simple syrup ahead of time so it has time to fully cool. For just this recipe, about 2/3 cup water and 2/3 cup granulated sugar makes enough. Store bought syrup works, too, but it won't taste as clean.
Reduce the amount of simple syrup if you want the drink less sweet.
Wash the limes and mint really well before adding them to the shaker.
