Combine the salt, Italian seasonings, pepper, garlic powder, and onion powder in a small bowl.

Season the steak(s) on all sides with the seasoning mix; be sure to use all of the spices.
1 ½ pounds flat iron steak
Preheat a cast iron skillet or heavy-bottomed skillet over medium heat, then melt the butter in the pan. Add the steak and cook for about 5 to 6 minutes on each side, or until it reaches your preferred doneness.

Transfer the steak to a plate, and let it rest for 5 to 10 minutes. Slice against the grain before serving, if desired.
Notes
Cook time: The cook time depends on the thickness of the steak and how done you like it. The steak I use is usually around 1 to 1 ½ inches thick, so adjust the time as needed.
Doneness: Use an instant-read thermometer for the most accurate results. For reference, medium-rare is 130°F to 135°F, medium is 140°F to 145°F, and medium-well is 150°F to 155°F. For food safety, the USDA recommends cooking steak to at least 145°F.
Optional marinade: To marinate the steak, whisk the seasoning blend with ½ cup olive oil and ¼ cup red wine vinegar. Add the steak and marinate in the refrigerator for about 30 minutes before cooking.
Storage and reheating: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stovetop over low heat with a small amount of butter, if desired.
