3

apples
peeled, cored, and diced into small pieces
Instructions
Preheat the oven to 350°F, and grease a 9×13-inch cake pan.
In a large bowl, whisk together the sugar, oil, and eggs until well combined.
2 cups granulated sugar,
1 ¼ cups canola oil,
2 large eggs
Add the flour, vanilla, baking soda, salt, and cinnamon. Stir with a sturdy spoon or spatula until combined. The batter will be very thick, almost like a paste.
3 cups all-purpose flour,
2 teaspoons vanilla extract,
1 teaspoon baking soda,
1 teaspoon salt,
1 teaspoon ground cinnamon
Fold in the apples, then press the batter into the prepared pan in an even layer.
3 cups apples
Bake for 40 to 50 minutes or until a toothpick inserted into the center comes out clean.
Let the cake cool for about 30 minutes, or until barely warm, before slicing. Serve plain or with vanilla ice cream.
Notes
The batter is very thick. Use a sturdy spoon or spatula if mixing it by hand.
A stand mixer can be used on low speed. Fold the apples in by hand and stop mixing as soon as they’re evenly distributed.
Store the covered cake at room temperature for up to 3 days or in the refrigerator for 4 to 5 days. Freeze for up to 2 months.
