32ouncesfresh sweet cherriesweighed before pitting, about 5 cups pitted
½cupgranulated sugar
3tablespoonscornstarch
1tablespoonfreshly squeezed lemon juice
½teaspoonground cinnamon
Instructions
Preheat the oven to 350°F, and lightly grease a 2 ½-quart baking dish.
Add the oats, butter, flour, brown sugar, granulated sugar, salt, and cinnamon to a medium bowl. Work the butter into the dry ingredients with a pastry cutter or your hands until the mixture resembles damp sand with no dry patches. Set aside.
1 cup old-fashioned rolled oats, ½ cup unsalted butter, ½ cup all-purpose flour, ½ cup light brown sugar, ¼ cup granulated sugar, ½ teaspoon salt, ½ teaspoon ground cinnamon
In a separate large bowl, toss the pitted cherries with the granulated sugar, cornstarch, lemon juice, and cinnamon until evenly coated.
32 ounces fresh sweet cherries, ½ cup granulated sugar, 3 tablespoons cornstarch, 1 tablespoon freshly squeezed lemon juice, ½ teaspoon ground cinnamon
Transfer the cherry mixture to the prepared baking dish. Sprinkle the oat topping evenly over the cherries.
Bake for 30 to 35 minutes, until the topping is golden brown and the cherry filling is bubbling toward the center of the dish.
Let the cherry crisp cool for at least 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
Notes
Frozen cherries may be substituted. Thaw them completely, drain away the excess liquid, and pat them dry before using.
To make the topping in a food processor, pulse the ingredients just until the mixture begins to clump together. This creates a more cohesive topping that bakes into a crunchy layer rather than loose crumbles.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
