Place the skillet in the preheated oven. Bake for 45 minutes, or until a toothpick inserted in the center comes out clean.
Serve immediately with extra butter or honey.
Store any leftovers in an airtight container for up to 3 days.
Notes
Pan size: This is a small-batch recipe made in a 6-inch cast iron skillet. You can also make it in a similar sized baking dish. If you only have an 8-inch skillet, the batter will be thinner and you'll need to reduce the bake time by 10 to 15 minutes. Start checking early.
Doneness: A toothpick inserted in the center should come out clean or with a few moist crumbs. If it has wet batter, it needs more time. Start checking at 35 minutes since ovens vary.
Sweet vs. savory: This is a savory, Southern-style cornbread with no sugar. If you like sweet cornbread, add 2 to 3 tablespoons of sugar to the dry ingredients or drizzle with honey before serving.
Jalapeños: Use more jalapeños for a spicier cornbread.
Storage: Store leftovers in an airtight container at room temperature for up to 3 days. Reheat wrapped in foil at 300°F for about 10 minutes to bring back some crispiness.
