Grease the bottom and sides of a 10x15-inch jelly roll pan or baking sheet with butter, and line the pan with parchment paper. Then lightly spray the parchment paper with non-stick cooking spray. Set aside.
To Make the Cake Batter:
In a large bowl, combine the sugar, pumpkin purée, flour, eggs, pumpkin pie spice, and baking soda.

Pour the cake batter into the prepared pan, smooth into an even layer, and bake for 14 to 16 minutes.
Remove the cake from the oven, and let it cool for a couple of minutes. While the cake cools, sprinkle the powdered sugar over a clean tea towel.

Carefully flip the the cake onto the prepared towel, and remove the parchment paper.
Roll the towel and the cake together, and allow the cake to cool. (The towel will be rolled up inside the cake.)
To Make the Filling:
In a medium bowl, combine the cream cheese, powdered sugar, butter, and vanilla. Fold in the pecans if using.

Gently, unroll the cooled cake, and use a spatula to spread the filling over the inside of the cake leaving about 1-inch of space along one of the shorter sides. Don't try to make the cake lay flat. It will try to roll at the ends.
After filling the cake, roll the cake back up and wrap it tightly in plastic wrap or place in an airtight container. Store it in the refrigerator for 1-2 hours to set.
Sprinkle it with extra powdered sugar before serving.
Notes
Canned Pumpkin Purée: Make sure you use pumpkin purée and not pumpkin pie filling. These are two different products and pumpkin pie filling won't work with this recipe.
Powdered Sugar: Don’t skip the powdered sugar on the towel. It keeps the cake from sticking.
Room Temperature Ingredients: Make sure the cream cheese is super soft and the butter is room temperature. This way the filling is creamy and free of lumps.
Warm Cake: Roll the cake while it's still warm but not super hot. Don't wait until it's cold or it will crack and break.
Storage: Store leftovers in an airtight container or wrapped in plastic wrap in the fridge for up to 4 days. Make sure it's completely cool before storing to help prevent stickiness.
