Preheat the oven to 400°F. Line a large rimmed sheet pan (13x18-inch) with parchment paper or lightly grease it.
Place the chicken, potatoes, and green beans in a large Ziploc bag or mixing bowl. Pour the dressing over the top, seal, and toss everything together until well coated.
1 to 1 ½ pounds boneless skinless chicken breasts, 1 ½ cups baby gold potatoes, 2 cups green beans, ½ cup Italian dressing
Arrange the chicken and vegetables in a single layer on the prepared sheet pan.
Bake uncovered for 25–30 minutes, or until the chicken reaches 165°F and the potatoes are fork-tender.
Optional: Broil for 2–3 minutes at the end for extra color if desired. Serve warm.
Notes
The calories listed are an approximation based on the ingredients in the recipe card and a serving size of 2 cups. Actual calories will vary.
Use two pans if it looks like the pan will be crowded (my pan in the photo is a little bit over full).
The cook time can vary greatly depending on the thickness of the chicken. We used boneless, skinless chicken breasts that were about ¾ an inch thick.
The chicken breasts can be cut into chunks if desired.
Make sure to cut the potatoes small so they cook through at the same rate the chicken cooks, or roast them first.
