Place flour, sugar, and salt into a medium bowl and whisk to combine. Add the butter, and use a pastry cutter or two forks to incorporate until the mixture resembles coarse cornmeal.
Next, add the shortening. Continue to use the pastry cutter until the shortening is evenly combined.

Slowly add the ice water, a tablespoon at a time, until dough comes together. Add it until the dough begins to come together in lumps. It should hold together when pressed but not be sticky.

Filling
Wash, core, and peel the apples. Thinly slice the apples and place them in a large bowl. Toss the apples with the lemon juice. Allow the apples to sit in the lemon juice for about 30 minutes (or longer). This will pull excess juice from the apples and keep the pie from being too soupy. Drain the juice from apples.

Add the sugars, apple pie spice, salt, and flour. Stir to evenly coat apple slices.

Assembly
Preheat oven to 350 degrees.
Remove dough from refrigerator. Beginning at the center of each ball, use a rolling pin to roll each ball into large circles slightly larger than 9 inches in diameter.
Place one crust in a 9-inch pie dish and press in place. Slowly pour the apple filling into the pie dish.
Add the top crust. This can either be a whole crust or cut into strips for weaving. Trim any excess crusts from the edges and use fingers to crimp the top and bottom crusts together.
If using a solid crust for the top, use a sharp knife to cut slits in the crust. Mix the egg and water to create an egg wash. Use a pastry brush to apply the egg wash on the top layer of crust.

Place the pie on a baking sheet lined with aluminum foil in the oven.
Cook for 45-50 minutes or until the top crust is golden brown. Remove from the oven and allow to cool completely before serving.
