In a small bowl, combine the mayonnaise, red wine vinegar, and Italian seasoning. Set aside. (If not using within 5-10 minutes, place into the refrigerator until ready to use.)

In a large bowl, combine the provolone, salami, ham, prosciutto, capicola, pepperoncinis, and red onion. Pour the dressing over the hoagie ingredients, and toss to combine.
8 slices provolone cheese, ¼ pound Genoa salami, ¼ pound ham, ¼ pound prosciutto, ¼ pound capicola, ½ cup pepperoncini, ¼ cup purple onion
Add the lettuce just before serving. If needed, add salt and pepper to taste. Serve immediately.
