Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger & salt.
In a separate bowl, combine the sugars, oil, eggs, pineapple, applesauce & vanilla.
Add the grated carrots to the wet ingredients & stir.
Pour the wet ingredients into the dry. Stir until combined.
Transfer to two round pans & bake 30-40 minutes.
Cream the frosting ingredients together & top the cake as desired.
