Chicken Enchilada Casserole

This popular Tex-Mex dish makes the perfect weeknight dinner and is packed with flavor.

Ingredients

– red enchilada       sauce – tortillas – chicken – Rotel – sharp cheddar       cheese

Step 1

Pour ½ cup of enchilada sauce into the bottom of a prepared pan.

Step 2

Layer tortillas, chicken, tomatoes, green chiles & cheese.

Step 3

Repeat layers twice more & top with enchilada sauce and cheese.

Step 4

Cook covered for 30-40 minutes.

Step 5

Uncover & cook an additional 10 minutes. Allow to cool.
