To Make the Simple Syrup

To Make the Virgin Mojito

large mint leaves

granulated sugar

simple syrup
or adjust to taste

club soda

freshly squeezed lime juice

ice

Instructions
Make the Simple Syrup
Add the sugar and water to a small saucepan over low-medium heat. Stir until the sugar dissolves, then remove from heat.
½ cup granulated sugar,
½ cup water
Let the syrup cool completely before making the mojito.
Make the Mojito
Add the mint leaves and granulated sugar to a cocktail shaker. Gently muddle the mint to bruise the leaves.
16 large mint leaves,
2 teaspoons granulated sugar
Add the simple syrup, lime juice, and ice. Gently shake to combine.
4 ounces simple syrup,
4 ounces club soda,
2 ounces freshly squeezed lime juice,
2 cups ice
Pour into a glass over ice without straining. Top off with club soda, and garnish with lime wedges and fresh mint. Serve immediately.
Notes
Let the simple syrup cool completely before using it, or it will melt the ice and water down your drink.
For a less sweet mojito, start with half the simple syrup and add more to taste.
If the simple syrup isn't ready in advance, add a little extra prep time to allow it to cool.
Leftover simple syrup keeps in the fridge for up to two weeks.
