Chorizo Tacos

Get the Recipe

Bring a large pot of salted water to a boil, and add the potatoes. Boil until fork tender, drain, and set aside.

Heat a large skillet over low-medium heat. Add oil and onions, and cook until the onion becomes translucent.

Add the garlic and cook for 30 seconds or until it becomes fragrant.

Add the chorizo and cook until it's cooked through and most of the moisture is cooked off, about 8-10 minutes.

Stir in the cooked potatoes.

Place 3-4 tablespoons of the mixture into a tortilla.

Add your favorite toppings and garnishes.

Serve hot with crumbled queso fresco, table crema, cilantro and limes on the side.
