Cream butter & sugar together until light and fluffy.
Mix in the egg & vanilla until all ingredients are well incorporated.
Beat in the key lime juice & lime zest. Add the flour, baking powder, salt, & baking soda.
Fold in the sweetened coconut flakes.
Scoop the dough onto the prepared baking sheet. Refrigerate one hour.
Bake until the edges begin to brown. Allow to cool.
