Key Lime Colada
This key lime colada recipe blends tart key lime juice, sweet cream of coconut, white rum, and key lime rum cream into a creamy frozen cocktail. It’s icy, smooth, and full of coconut-lime flavor without using any pineapple juice.

I’ve loved key lime since I was a teenager. Give me key lime pie, fudge, cookies, cheesecake dip, or just about anything else with that bright, tart flavor.
This drink is perfectly balanced. The lime comes through without overpowering the coconut, and it isn’t especially strong for a rum cocktail. Everything mixes together smoothly, and the whole thing takes about five minutes to make in the blender.
My Tips for the Best Key Lime Colada
Blend the drink only until the ice is completely smooth. It should be thick and creamy but still easy to pour. Running the blender longer than needed can warm the mixture and make it melt faster.
Fresh or bottled key lime juice both work well here. Fresh key limes are small and don’t give up much juice, so bottled juice is the easier option when you’re making several drinks. Nellie and Joe’s brand is my favorite!
Use white rum when you want the lime and cream of coconut to stand out. Coconut rum also works, but it makes the drink a little sweeter. Either way, serve the colada as soon as it comes out of the blender because it will begin to melt and separate as it sits.
For a casual summer meal, serve these coladas with grilled shrimp tacos or mahi mahi fish tacos. A bowl of pineapple salsa and tortilla chips makes another tasty option.

How to Make a Key Lime Colada
Blend the drink: Add the ice, cream of coconut, key lime rum cream, white rum, and key lime juice to a blender. Blend just until the ice is smooth and the drink is thick, creamy, and pourable.
Taste and adjust: The lime and coconut should taste balanced. Add a small splash of key lime juice if you prefer more tartness or a little extra cream of coconut if you want it sweeter.
Pour and serve: Divide the colada between chilled glasses and serve it right away. Top each drink with whipped cream, lime zest, toasted coconut, graham cracker crumbs, or a maraschino cherry.
